The Ultimate Dessert: Kelsey Bars

I probably don’t need to tell you this, but these are really delicious. Like really really freaking good. I always say, they are LITERALLY HEAVEN in a bite!

Ingredients

Brownie Layer
½ cup butter
¾ cup sugar
2 eggs
¾ cup flour
¼ tsp salt
2 tbsp cocoa
1 tsp vanilla
Marshmallow Layer
16 oz Jar of Marshmallow Creme
Top Layer
6 oz package of chocolate chips
1 cup peanut butter
2 cups Rice Krispies

Directions

Layer 1: Brownie Layer

With a mixer, mix together butter, sugar, eggs, flour, salt, cocoa and vanilla, until well combined.

Batter will look AMAZINGGGG and I promise you will want to taste test!

Spoon into a 9X13″ baking dish.

Spread evenly and bake at 350° for 15 minutes.

Layer 2: Marshmallow Layer

After brownie layer has baked for 15 minutes, immediately take out and spoon out marshmallow cream. It will be ooey gooey and sticky, but oh so good!

DO NOT TRY to spread this layer. You will then return to oven for three minutes.

After three minutes is up, you will then be able to spread the marshmallow creme over the brownie layer. Return to oven for another 3 minutes.

After the three minutes is up, let bars cool. DO NOT begin top layer until bars have completely cooled.

Layer 3: Peanut Butter, Chocolate Chip Crunch Layer

Using a double-boiler or microwavable dish, melt peanut butter and chocolate chips together.

Pretty sure this is what dreams are made of! Is there anything better than mixing PB and chocolate together!?!

Then add in the two cups of Rice Krispies.

Stir together.

Pour and spoon over marshmallow layer.

Spread over bars and chill before cutting into.

Before I talk about why these are SO amazing, you’re probably wondering why in the world these bars are named after me! Well, growing up these were my all-time favorite and literally still are. I would ask my mom to make these anytime I had to bring treats to school and overtime we realized, the name marshmallow bars just wasn’t cutting it and infact they are SO MUCH MORE than marshmallow bars. They have a brownie layer, a marshmallow layer and the top layer made from melted peanut butter & chocolate chips with some Rice Krispies for that extra texture. These bars are WAYYYY too fun to have a simple name like that. So one day, my dad had called and mom was telling him she was making Kelsey bars for school, you know the ones she always requests! Anyways, from that day on the name just stuck! These are super easy to make, but even more importantly they are SO.DANG.GOOD. I promise you, you will make these and you will either hate or love me for it! 🙂

Recipe: Kelsey Bars

Ingredients:

Directions:

Preheat oven to 350°

Layer 1: Brownie Layer 

  1. Mix together the butter, sugar, eggs, flour, salt, cocoa and vanilla with a mixer. Mix until smooth and all ingredients is well combined, scraping edges
  2. Pour into a 9X13″ cake pan and smooth out
  3. Bake at 350° for 15 minutes
  4. After the 15 minutes is up, you will take out and immediately add the marshmallow layer 

Layer 2: Marshmallow Layer

  1. After 15 minutes is up, you will immediately top brownie layer with marshmallow creme. It will be sticky, but just dot around brownie layer
  2. You will then return to the oven for 3 minutes
  3. After 3 minutes is up, you will take out and spoon marshmallow creme evenly over brownie layer
  4. Return back to oven and bake for another 3 minutes
  5. After this time is up, you will let cool before beginning the top layer. Do not mix top layer until this is completely cooled off

Layer 3: Chocolate, Peanut Butter Crunch Layer

  1. After the bars have cooled, you can begin this step. In a double boiler or microwavable dish, melt together 1 cup of peanut butter and 6 oz. of chocolate chips. 
  2. Then add in two cups of Rice Krispies and mix all together. 
  3. Pour over top of marshmallow layer and spread evenly.
  4. Finally chill bars until set and cut into squares to share!
