Friday Thoughts

This week was pretty uneventful to be honest, besides the insanely nice weather that North Carolina somehow managed to score this week….cue the Sunny and 75 song. Not sure how we got so lucky, but we somehow scored 75 degree weather the past four days. I keep thinking it’s April, but really it is still the first week of February. Not complaining by any means…this Iowa girl is just not used to it! So everyone this week, myself included, took advantage of those warm temperatures and got outside to enjoy it, I even did a little grilling last night when I got home from work. Now I’m just hoping we don’t pay for it in March.

And to all my Midwest friends, know that warm days will be headed your way…hopefully real soon!

So with an uneventful week, here’s what was on my mind:

1. Brussels Sprouts

Last night I finally decided to make something with the brussels sprouts I had in my fridge. I had been wanting to try this Brussels Sprout Chip Recipe for quite some time and I am sure glad I tested the recipe out. They were so yummy and easy to make!

I also asked you all on Instagram if you had a favorite recipe and below are some of the responses I received…

  1. Seared and sautéed with olive oil, garlic, parmesan and bacon
  2. Bacon, cashews and jalapeños in a cast iron skillet
  3. Panco Crusted Brussels Sprouts, recipe can be found here.
  4. Bacon, maple syrup and red pepper flakes sautéed together
  5. Truffle oil, salt, pepper and chopped garlic can be sautéed together or baked at 400 degrees for 20 minutes.
  6. And to the people who said only if cooked outside or in the trash…thank you for making me laugh. 🙂 I do know that you either love or hate them and yes, they do smell up your kitchen.

2. Blue Bell Ice Cream

From brussel sprouts to ice cream = my life. LOL I’m all about the balance over here and I mean…have you ever seen a prettier shelf in the grocery store!? 😉 My love for Blue Bell ice cream runs real deep and they so happened to release a new flavor this week…Raspberry Fudge Brownie. So if you are an ice cream fan like me and live in the area that carries Blue Bell (sorry Midwest friends), make sure to check it out…it’s only out for a limited time!

3. Ghosted

Started this book back in the Fall and honestly, couldn’t get into it (even know some others who felt the same way), but I kept seeing and hearing that it was such a great read. So after talking to someone that agreed with me that the beginning was hard to get into and once you got through the beginning it was SO worth it. Therefore with it being February and Valentine’s Day coming up and the fact that this book is about a girl being ghosted after meeting a guy…I figured what the hell, I’ll give it another shot and OMG am I SO glad I did. This is not at all your typical dating ghosting story and by that I mean, go on a couple of dates and never hear from the guy again because they don’t have the guts to tell you to your face that they aren’t interested or don’t see this going anywhere. This ghosting story is a thriller that will keep you guessing and on the edge of your seat the entire time. You will seriously not be able to it down.

Also, if you have a great ghosting dating story, I would love to hear it! I know, I’m not the only one who has been ghosted or unfortunately has ghosted someone in the past.

4. Calm App

A year ago, a friend introduced me to the Calm App, an app that is used for meditation and mindfulness. I had never really meditated before on my own, besides when I would attend a group yoga class. This friend knew I was going through some things and suggested that I just try it as she thought it would be really good for me. So I gave it a go and I’ll never forget the first time I tried it on my own, in my house, on my living room floor. I’m pretty sure there were some tears and I could hardly sit for the 10 minutes, let alone control my mind. Now one year later, it is hands down my favorite app and I make sure to try and use each day. Whether it is in the morning or at night, I love their #dailycalm and deep sleep practices. Both have helped me in SO many ways and with Valentine’s Day coming up and how important it is to love yourself, this is a great app to try!

5. Valentine’s Day Treat

Valentine’s Day is less than a week away and that means it is time to share the love with those around you. These Cherry Bars are the perfect treat to make and share with your co-workers, friends, neighbors, etc. I will be making them Monday night to take into work on Tuesday! 🙂
