I had seen this brussels sprout chip recipe shared over and over again on Facebook via Delish.com, so I figured I would give it a go and adventure away from my normal baked brussels sprout recipe last night, try something new and see what I thought!

After making these, I seriously wondered, "WHY have I not ever cut my Brussels sprouts thinly like this before?!?!" I loved them SO much more this way! I typically have always just cut them in half, but this way y'all. Gamechanger. Not only did I like easting them better this way, but they turned out crispier...really making them seem like chips! They were SO easy to make, used ingredients I had at the house and in 20 minutes had a great and healthy side dish. Even ate the leftovers for lunch today and still tasted great! Win win!

Recipe: Brussels Sprouts Chips

Ingredients:

 ½ lb Brussels Sprouts
 2 tbsp Grated Parmesan
 1 tbsp Olive Oil
 1 tsp Garlic Powder
 Sea Salt + Pepper

Directions:

Preheat oven to 400°. In a large bowl, toss brussels sprouts with olive oil, Parmesan, and garlic powder and season with salt and pepper. Spread out on a baking dish and bake for 20 minutes, stirring halfway through until they are golden and crispy.

Preheat oven to 400°. Thinly slice brussel sprouts

In a large bowl, toss brussels sprouts with olive oil, Parmesan, and garlic powder and season with salt and pepper. Spread out on a baking dish.

Bake at 400 degrees for 10 minutes, toss, and bake 8 to 10 minutes more, until crisp and golden.

Enjoy! Serve with a dipping sauce or are simply great as is and as a veggie dish for ANY meal.
