Recipe: Caramel Rice Chex Mix

Ingredients:

 ½ cup butter
 ½ cup dark Karo syrup
 1 cup brown sugar
 1 tsp vanilla
 1 tsp baking soda
 9 cups Rice Chex

Directions:

  1. In a saucepan add the butter, dark Karo syrup and brown sugar. Bring to a rapid bowl. Make sure to stir continuously, so it does not burn.
  2. After mixture is boiling, add in vanilla and baking soda. Mixture will turn a lighter color and foam up - remove from heat. 
  3. In a large mixing bowl, Pour sauce over Rice Chex and stir until Rice Chex are evenly coated. 
  4. Pour into a 9X13” pan and bake for 15 minutes at 200 degrees. Stirring every 5 minutes.
  5. Once time is up, take out of the oven and transfer mixture to wax paper and let mixture cool. 
  6. After mixture has cooled, time to dig in! Enjoy!
  7. Can then transfer and store in a  Ziploc baggie, but I guarantee it won't last long!

Add butter, karo syrup and brown sugar to saucepan

Melt on medium-high heat. Make sure you are stirring.

Bring mixture to a rapid bowl.

Pour over 9 cups of Rice Chex. Stir all together

Pour onto 9X13” pan

Bake for 15 minutes at 200 degrees and stir every five minutes

Once time is up, take out of the oven and transfer mixture to wax paper to cool

Below I am also linking all the products I used to make this recipe, except the butter...I know you know what that is! 🙂  If you don't own a 13X19" baking dish or one of these large Tupperware bowls, they are a STAPLE kitchen item that I use all.the.time and suggest adding to your kitchen at some point.  The 13X19" baking dish is one of the most used pans in my kitchen, whether it be for pumpkin bars, baking fajitas, spaghetti squash, this recipe, etc. I use it for everything! The large Tupperware bowl is another great item for your kitchen, as sometimes mixing bowls are just not large enough. I use this when I am making bread and other large recipe mixtures...like this Caramel Rice Chex Mix!
