Dark Chocolate Raspberry Pie Bars

Nothing screams raspberry season like going back to Iowa and picking raspberries with your mom. A family friend has a large patch of raspberries and we were lucky enough to get to go pick and enjoy them while I was home. We picked SO many that there was plenty for me to bring back to North Carolina and enjoy/experiment with. So I figured, this was the perfect opportunity to try some new recipes. I asked you all on Instagram which you would prefer: a breakfast or dessert recipe and of course the results were SO close and after researching recipes, I knew there was NO WAY I could just make one. So I am kicking off the first raspberry recipe of the season with: Dark Chocolate Raspberry Pie Bars. I KNOW. The name says it all! I knew as soon as I saw this recipe, the simple ingredients and how quick and easy it would be to make these, they would be the dessert option I would try! Below you will find the ingredients, recipe and step by step instructions on how to make these.

Recipe: Dark Chocolate Raspberry Pie Bars

Ingredients: 

Crust
 1 cup unsalted butter, room temperature
 2 cups flour
 ½ cup light brown sugar
 ¼ tsp salt
Chocolate Layer
 1 cup dark chocolate chips
 14 oz can of sweetened condensed milk
Top Layer
 1 cup mini semi-sweet chocolate chips
 1 cup raspberries, semi-crushed

Directions:

Preheat oven to 350ºF and grease a 9X13" baking pan.

  1. In mixing bowl cream the butter until smooth.
  2. Add in the brown sugar, flour and salt and mix until dough become crumbly. Don't over mix!
  3. Press 3/4 of that batter into the greased 9X13" pan. Set aside the remaining crumbs. 
  4. Bake crust for 10-12 minutes or until crust is lightly golden. 
  5. While the crust is baking, you will prepare the chocolate layer.  In a small saucepan over medium heat, add in the 1 cup of dark chocolate chips and 14 oz. can of sweetened condensed milk and stir until melted and well combined.
  6. After crust is done, remove from oven and pour chocolate mixture over warm crust. 
  7. Sprinkle the remaining crumbs over chocolate layer. You will then add the raspberries and top with mini chocolate chips.
  8. Return to oven and bake for another 20-30 minutes. (I baked mine for 30 minutes). Let cool before cutting into the bars. 

Step by Step Instructions

Crust Layer

Using a handheld or stand mixer - cream 1 cup (2 sticks) of room temperature unsalted butter until butter is creamy and smooth.

After butter is smooth, add in the 1 cup of all-purpose flour.

Next add in 1/2 cup of brown sugar.

And lastly you will add in 1/4 tsp. of salt.

Once all of your crust ingredients are in your mixing bowl, you will mix until dough turns crumbly. Do not over beat. 🙂

Dough should look like this before pressing into your greased 9X13" pan.

In your greased 9X13" pan, you will press 3/4 of the dough into the bottom of the pan - set aside the remaining dough - as you will use that for the top layer. Bake at 350° for 10-12 minutes or until crust is a slightly golden brown color.

Chocolate Layer

While the crust is baking you will get the middle chocolate layer ready. This does not take long to heat up, so I would wait until there is about 5-6 minutes left on the crust before beginning. In a small saucepan on medium heat you will add the 1 cup of dark chocolate chips.

You will then add in the 14oz. can of sweetened condensed milk and stir until chocolate chips are melted and well combined.

Chocolate layer should look like this after chips are melted and stirred together with the sweetened condensed milk. Make sure to not burn. 🙂 I dare you to try and not taste test this layer either. Holy crap. SO GOOD!

Top Layer

After the crust has baked and the chocolate layer is ready, you will pour the chocolate layer over the warm crust and spread evenly across. You will then add the remaining dough - just sprinkle that batter evenly over chocolate layer. You will then add the raspberries and mini chocolate chips.

Return to oven and bake for another 20-30 minutes at 350°. After time is up, let bars cool before cutting and serving.
