Homemade Chicken Noodle Soup

Soup season is finally here and on of my favorites is Chicken Noodle! This recipe is so easy and quick that I had the time and energy to start decorating for the holidays while it cooked. And sure leaves the house smelling so yummy...putting me in the perfect mood!

Feel free to customize the below recipe as you like. I LOVE it with lot of veggies, so I chopped up the entire bag of carrots and celery. When I do this, I typically do add in a little bit more of the spices as well. And, depending on how many veggies you add, you may have to add a little bit of water to the soup the next day, as the noodles will have absorbed some of the broth.

Don’t forget, you must use the frozen Reames noodles, unless you decide to make homemade, but who has time for that!? I have never made homemade noodles, but I promise you these taste just as good, if not better. They’re in any large grocery store, even Wal-Mart carries them.

Please note, this soup does make a lot, so it is great to either freeze or to enjoy throughout the week. Whether you are looking for a weeknight meal or something that you can make ahead and freeze, this chicken noodle soup recipe is it.

Recipe: Chicken Noodle Soup

Ingredients: 

 2 - 48 ounce cans of Swanson Chicken Broth
 2-4 cups shredded chicken (5-6 chicken breasts)
  cup chopped onion
 1 cup chopped celery
 1 cup chopped carrots
 ½ tsp salt
 1 tsp parsley flakes
 1 Bay leaf
 ¼ tsp pepper
 ¼ tsp celery salt
 1 lb bag of Frozen Reames Homestyle Egg Noodles

Directions:

  1. In a medium size pot, boil your chicken breasts in water for 30-35 minutes, after time is up, drain water and shred chicken breasts. Easiest way to do this is by hand. 
  2. While the chicken is cooking, chop up your carrots, celery and onion
  3. In a large pot or crockpot, add all of the above, plus spices to your chicken broth and cook on low for 2-4 hours.
  4. After 2-3 hours of cooking on low, you will add in the 1# bag of Reames Home Style Egg Noodles and cook for one more hour.
  5. Serve with bread and enjoy!

I know the recipe only calls for 1 cup each of carrots and celery, but I LOVE my soup chunky with all.the.vegges so everything you see in this photo is what I chop up. I only did about half of the onion, but I did include the entire bag of carrots and celery

Here you will see everything chopped, as well as the shredded chicken. I find that it is easiest to shred the chicken with my hands...let it cool for about 5 minutes before doing this. You can also chop your veggies to your desired size!

In a large pot or crock pot, you will dump everything in, EXCEPT the noodles. Cook on low for 2-4 hours.

One hour before you are ready to eat, add in the entire bag of frozen Reames noodles and let cook for one more hour.

After time is up, pour yourself a bowl and serve with a side of bread OR pick up a bread bowl from Panera on your way home from work and pour in there! 😉
