Midwest Meatloaf

Happy Monday, friends! It has been a cold and rainy day here and looks like it is going to be that way for the rest of the week. When the weather gets like this, I am ready to break out all of my favorite dishes, soups, etc.  You will soon realize that the feel-good recipes I will be sharing frequently are things that I guarantee taste good, are easy to make and are meals that I hope inspire and make you want to sit down with your family and friends and share together! 

This meatloaf recipe is something I have seriously had since I was a little girl and literally is one of my FAVORITE all time dishes and before you go hatin' on meatloaf, let me tell you...do not say one thing about this meatloaf until you have tried it! I'll never forget making it for my friends for the first time in Oklahoma and they were all skeptical because they had had a "bad" taste of meatloaf and my response was, well it wasn't this one, so just try it and if you hate it, that's fine! So I made it, paired with baked beans (can find my recipe here) and a baked potato. Nothing fancy, but I promise you there wasn't a single bite left and they were all asking for this recipe...so maybe it is just my mom's Midwest Meatloaf Recipe! 😉

Over the past couple of weeks it has been so fun sharing some of my Midwest recipes with everyone. I have realized in my travels and living in Oklahoma and now North Carolina there are some differences when it comes to food. Most of y'all have agreed that Tater Tot Casserole was definitely a Midwest dish, so we will see if this meatloaf is too! 

Below you will find the recipe, along with step-by-step directions. I hope you enjoy this recipe as much as my family and friends have over the years! 

Recipe: Midwest Meatloaf


Yields1 Serving
Prep Time5 minsCook Time1 hr 30 mins

Ingredients:

 1 lb hamburger
 1 egg
 1 ¼ cups tomato juice
 1 cup oatmeal
 ½ tsp salt
 ¼ tsp pepper
 Ketchup to drizzle on top

Directions:

Mix all together with your hands, until well combined. In a greased baking dish, pour mixture into and shape into a loaf. Drizzle with ketchup and bake at 350° for 1 hour. Simply pair with baked beans or potatoes. 


 

Step by Step Instructions

In a medium sized mixing bowl, add the 1 lb. of thawed hamburger. Then add one full egg.

Next you will add in the 1 cup of oatmeal. Can use regular or quick oats...either works just fine! I have made it both ways.

Next add your salt and pepper.

And lastly add in your tomato juice.

Using your hands you will combine all the ingredients. Yep it's kind of gross, but I have learned that it is just easier that way! Mix until well combined.

Spray either a loaf pan or an 8X8" glass baking dish. Either option works as you will be forming the mixture into a loaf.

Pour combined mixture into the greased pan.

Shape into a loaf.

Drizzle ketchup over top.

Ready to bake! Stick her in the oven for 1.5 hours at 350 degrees.
